Since we have Cat Blogging Fridays, i thought I should do something on Tuesdays....That way no matter how busy I get, I will have some sort of a prompt..as least for 2 out of the seven....
So, every Tuesday, I will share a treat....those who know me, know i LOVE to cook, and am most happy when I am in my kitchen creating and baking and generally feeding people. it is a wonder that Keith is not 300 lbs, although I guess I am lucky that he has THAT kind of metabolism.
First up.....
Bread Pudding.
My BREAD PUDDING
7 or 8 slices of white bread--into 3/4" pieces
3 cups hot milk
2 beaten eggs
2/3 cup sugar
1/4 tsp salt
1 tbs butter
1 1/2 tbs vanilla extract
1 1/2 tsp almond extract
1/2 tsp cinnamon
1/2 tsp nutmeg [+ sprinkle over top when in pan]
1/4 tsp baking powder
Coat 8" X 12" casserole dish with butter. Pull bread into 3/4 " pieces & put aside. Combine remaining ingredients and mix well. Add the bread and mix well.
Add to casserole dish and sprinkle with nutmeg.
Bake in 350°F oven for 45 minutes.
Serve while warm, with heavy cream over top...YUMMY!




I love bread pudding, although I pretty much only make it in the winter.
Instead of white bread, I use any leftover Italian bread and tear that into chunks (if we don't finish a loaf during the week, I tear it into chunks and put it in the freezer. Yum!
Hmm... wonder how the baking power affects the pudding. I never use any leavening.
